It is prepared from similar ingredients as juice and other preparations from aronia – from fruit, sugar and water. However, the proportions and method of preparation are different. You don’t need so much sugar here.

Ingredients:

  • 2 kg aronia
  • 2 l of water
  • 40 dag of sugar

Remove petioles and stalks from aronia fruit and wash the fruit. Dry them with a paper towel and put them in the freezer (to deprive the fruit of its tart taste).

Put the aronia fruits removed from the freezer into the jars right away. Boil water and sugar in a pot to make syrup. Still hot, pour aronia in the jars, put the caps and put the jars in a pot to cook the jars. Pasteurizing the preserves is to extend their shelf life, so we can store them in the home pantry all year round. In this case, pasteurization should take about 20 minutes. Take out the jars with a grab, turn them upside down and wait for them to cool down.

Aronia jam recipe

Ingredients:

  • 1 kg of aronia
  • 1 kg sugar
  • 0.5 glasses of water

Clean aronia fruits from stalks and tails, rinse in cold water and drain off. Put them in a pot, pour water and sprinkle with sugar. Once the water has boiled, cook everything for about 30 minutes, stirring from time to time. Set aside the pot to cool down overnight. In the morning, boil the contents again, preparing the jam over a low heat. The fruit should thicken in combination with the sugar. Put such a still hot product into the preserves’ glass jars, turn it over and turn it upside down. Wait until the jars and aronia jam cool down.

Aronia juice recipe

aronia juice recipeAronia juice is one of the most popular preserves, which is made from these fruits. Made in the summer season and stored properly, it will surely be useful for the winter period and will help to increase the body’s immunity.

Ingredients:

  • 3 kg aronia
  • 1 kg sugar
  • cherry leaves
  • citric acid to taste

Before you start processing aronia, clean the fruit, rinse it in cold water and put it in the freezer first. The fruit should freeze for a few days, which will help to reduce their characteristic astringency. You will prepare aronia juice in a steel juicer.

A juicer is a large pot that consists of a few parts. Counting from the bottom: a water container, a juice container with a silicone tube with a clamp and a fruit container. The top is topped with a glass lid. Pour the water into the lower container, place the juice part on it, and at the very top place a container filled with still frozen fruit. You can also add cherry leaves and a bit of citric acid for flavour. Sprinkle aronia with a kilo of sugar and start cooking!

Place the juicer on the stove and cook over low heat for about 1.5 hours (counting from boiling water in the lower tank). Make sure there is enough water in the pot and top up if necessary. There is a silicone tube at the juice section through which the juice is discharged. After pouring the juice, boil the product again and pour it completely into bottles of homemade juices. After dilution, you can taste the fresh juice right away, or place the bottles upside down and put them in the pantry.

Aronia tincture recipe

Ingredients:

  • 2 kg aronia
  • 1 kg sugar
  • 1 litre of pure vodka 40-60%
  • 0.5 litres of spirit
  • Lemon
  • 1.5 l of water (spring or boiled and filtered)

Clean the aronia fruit, wash it in cold water and drain it in a colander. Do not forget to remove the petioles and stalks! Scald the lemon with boiling water and peel – cut the peel into strips and squeeze the flesh on a citrus squeezer. Put aronia fruits and lemon peel into a pot, pour 1.5 l of water and cook for about 1 hour, over low heat. Cover the stock and set aside for 24 hours.

The next day, pass through the gauze and boil again. Add sugar to this stock and stir to dissolve well. Then add the previously squeezed lemon juice, spirit and vodka. Wait until it cools down, pour into a larger tincture bottle or several smaller ones. Set aside the tincture dishes in a cool place – it will only be ready after a few (6-7) months.
